the first question is which IP address do you want to use? your box has
several (at least two IPv4 and probably 3-5 IPv6 addresses if you only have
a single network connection, more if you have multiple network connections)

you can change the template that you use to write the log message to say
anything that you want, including to have a hard coded string (which could
be an IP address) instead of the hostname.
