I was wondering if there is a list of charts one can use for various
displays on the "statistics" page instead of the normal 4 that are always
there.

I need a graph (area/ line) that displays the number of messages per second
over a period of time, say the last 24 hours. A absolute plus would be to
see various hosts on the same page each in a different colour.  This makes
is very easy to see if there was any downtime on the host itself, and also
to see what is unusual behaviour for a host.

I was thinking maybe somewhere you can post a few options that a person can
use. Even if it is just php code you copy and paste for now.
