If it were me I would take out all the non-essentials.  So, drop the UDP
server address line (default is all interfaces) and add a line like...

*.* /var/log/everything

right after that and before any other rules.  If you get pfSense logs in
'everything' then it is probably a configuration issue.  If not then it is
something preventing rsyslog from getting the log at all.

Don't run that for too long cause everything gets really big really fast!
